Our lightly buttered paper-thin phyllo dough [the Greeks inherited their word for leaf to the world of pastry] is deftly rolled by hand, not too loose-not too tight, layer over layer, to evenly wrap the fillings of our recipes and make sure they will bake to a perfect aromatic blend. Compared to the traditional spread of phyllo sheets in a pan, the roll is far more delicate a process; to master it takes time and effort. To masterly produce 50.000 handmade baklava rolls a day you will certainly need a dedicated team like ours.

Over the years our handmade baklava was introduced to visitors in Ioannina, Athens, Santorini, Crete, Corfu, Mykonos, Rhodes and other destinations in Greece, before traveling to Austria, Canada, Cyprus, France, Germany, Holland, Hungary, Italy, Norway, Poland, Slovakia, South Africa, Sweden, Czech Republic, Switzerland, the UAE, the UK, and the USA.

the Garden

“It’s not possible you don’t bake wonderful things, other than baklava!”

This is what Athena Kolionasio heard year after year from her international partners. As she explained to me, she finds this reaction curious interesting for two reasons: Firstly, her handmade Athena Sweet Athena baklava are not coming in excellent quality, in all their range of flavours, without considerable hard work. Secondly, Athena’s love of great taste has always driven her on to create new products. Well, it seems she has accomplished that!

Pasta with fresh vegetables, completely natural and wonderfully delicious, without salt or other additives, just perfect for a 6-month-old baby to try - and enjoy! Homemade, by hand and by two friends, Christina and Kostas, who started creating first for their own family. Athena had just launched Garden of Eden (a divine vegan baklava with extra virgin olive oil, with no trace of sugar) and Pasta Garden came along, easily and literally - Pasta from the Garden!
